  • fresh Mint Marinade (for lamb)

    Marinated Mint Lamb

    serves 6

    5lb leg of lamb
    4 oz extra virgin olive oil
    4 garlic cloves
    6 tbsp lemon juice
    zest of one lemon
    1 oz fresh mint leaves, shredded (no stems)

    Blitz Marinade ingredients in a food processor or pestle & mortar.

    Put lamb in a roasting tin, spread over the marinade - leave in fridge overnight.

    Preheat oven to gas 4/ 180C and take lamb out of fridge

    Roast for about 1.5 hrs, basting as necessary
