  • Tasty Chicken Marinade Recipe Required

I found some chicken thighs and drumsticks in the freezer, they're defrosted now and fancied roasting them in a tasty barbecue or honey type glaze.

Any links or recipes you can recommend?

Mix together a good dollop of honey, some soy sauce, lemon juice and vinegar. Add hoi sin sauce if you have (or teriyaki) and a bit of chilli and garlic and a finely chopped onion. Add bits of each till it smells yummy and away you go. Makes a yummy sticky black goo if you cook it low and slow

Ok - chook in the oven bubbling away, OH is showering the dogs!

I have an enormous Maytag American fridge/freezer - we could survive for months on my store cupboard alone - over 150 jars of jams, chutneys, marmalades and curds. Please let the weather get better soon so I can get back out into the garden, lol.

Well I hope you enjoy the marinade. It is a version of my 'renowned' sticky rib sauce (minus a couple of secret ingredients)

got a favourite, always does it for me and the bratz in cold weather

              you will need:

              2 tablespoons each of :
              honey
              worcester sauce
              tomato puree
1/2 to 1 teaspoon of ginger ( depending how hot you like things)

mix together with 1/2 pint of chicken stock
dash of olive oil in hot frying pan, add chicken, onions/shallots and mushrooms, until chicken is seared outside and nearly cooked through, pour over marinade, simmer for 10/20 minutes, just until chicken is to your liking serve with roast potatoes or sweet potatoes roasted in butter
