  • What on earth do I do with these????

Ok- so I thought I was getting a dozen hens eggs from one of the locals.....

Looks like there are 5 hens eggs a goose egg and 4 duck eggs ( 2 brown and 2 white)

I've never cooked duck or goose eggs ...what can you recommend...tried and tested please!!!

We've scrambled, fried and omletted duck eggs and they were lovely. We cooked daughter duck egg fried on toast to see her reaction over the size of it. She was only small and the look on her face was a picture!!

I read that the whites can go rubbery when fried- so have decided tonight to scramble 3 with a jar of wild mushrooms with tarragon. - and fried parsnips and tomato salad...still have 2 to go and a goose egg ( miss-counted!)
they were laid on the 15th- does that make any difference???..the yolks stood proud when cracked onto a dish- as do my fresh chook eggs!....eating in a few mins when OH has yanked down some heavy stuff from the cottage walls!

Have never really gone a bundle on fried duck or gooses eggs, like the others say, the white goes a bit iffy.

Boiled and dippy yuuuuuuuuuuuuummmmmmmmmmmmmm! Lauren and I share a goose egg cos we can't eat a whole one each! Cakes made with duck eggs are beautifully moist and rich.

Have to say that was yummy last night!
Didn't quite know what to expect- but the egg was certainly creamier!

Looking forward now to trying the goose egg!

Yep, but not hens eggs (thank gawd) - a couple of years ago, first ever duck egg. Paramedics - hospital - stabilized, then threw up and started all over again as the duck egg re-allergised me as it travelled back out and throat started to swell again - nightmare it was have to be really careful in restaurants now just in case as duck eggs have got more popular

Hayley, huge sypathies, I've had an anaphylactic event and it wasn't something I'd want to repeat in the future - let alone just after the first!
                          Cheers
