  • Too many ripe tomatoes?

    It's probably been mentioned before but... Freeze them.

    OK, they go soft when defrosted and you can only use them in a sauce but the skins peel off as they defrost and you get a wonderful fresh tomato flavour.

    Sausage hot pot recipe (serves 4):

    Grill 8 sausages until just done and slice in half cross ways.
    (Works well with veggie ones as well)
    Fry a large sliced onion in a big pan with oil until golden.
    Add defrosted tomatoes (however many you fancy - the more the merrier!)
    Add sausage halves
    Add 1 can kidney beans strained and rinsed.
    Add 1/4 pint of strong, dry cider
    Add 1 chilly (or more if you want it more spicy)
    S and P and some tomato puree to give it colour
    Heat until bubbling and the sausages are done.
    Serve in bowls with loads of fresh crusty bread.

    A great winter warmer.

    Sounds great Tom, but with wet summers and blight for the last 2 years too many tomatoes is not a problem I've had!! Hope to remedy that this year though.

      Welcome to the vine, Tom - but after the past two summers, I don't think you'll find many folks in need of that tip, more's the pity! Oh well, we can but pray for sunshine...

        I froze lots a few years ago - but sadly not enough this past 2 years. Roll on a decent summer!

            Thanks Eyren. I'm lucky, I have a greenhouse and somehow did well with my toms last year. Someone gave me a couple of 'Venessa' tomato plants and they just went for it! Ended up with loads of them. They might well have liked the cooler summer.

            I'm growing 'Jersey Devil' this year.. not a clue what to expect from them but that's half the fun!
