I have been asked to post a few kale recipes for Manda. None of these are my ideas but I have taken other recipes and 'adjusted them':
1. Kale & Lemon Soup
This soup is varies depending on how I feel and how many additional veg I want to throw in.

I have amended it to include more kale, less garlic and one large lemon [juice and rind] but you can use as much or as little lemon/rind to suit your own taste.
2. Chinese potsticker dumplings with Kale
The basic recipe is on this link

I just add kale instead of chinese leaves and more of them [50/50 to pork is much tastier to me]. These freeze well - either just the filling or as a completed dumpling. They are a bit fiddly until you get the hang of them so I always make a double batch and freeze half. Very tasty, yum. It needs two pans on the go at once to feed a few.
3. Pumpkin, Kale and Parmesan Salad
This is pinched from the paper last month - its really tasty and again features lemon, which I think make this work. The raw pumpkin is really interesting but watch the quantities - this is a lot of food.
