Must admit these are two of my own recipes - hence no actual amounts of ingredients.
Dexterdog's Potato & Bacon Pie
Ingredients:
Sufficient potatoes to fill your pie dish, peeled, chopped into chunks
1 large onion, peeled and chopped
A "nice" amount of bacon, or however much you fancy - with no rind and chopped into pieces
Chicken or vegetable stock
Salt and pepper
Packet mix of shortcrust pastry or ready-roll pastry
Cook your potatoes in salted, boiling water until tender and add to your pie dish.
Gently cook the onion and bacon in a small amount of oil. When soft add to potatoes in pie dish and mix.
Season mixture and add a small amount of stock so the filling doesnt dry out.
If you want to you can freeze your filling mixture at this point until needed.
Mix pastry and roll out to fit pie dish. Put over pie dish making sure the edges are sealed. Brush pastry with either a beaten egg or milk.
Cook in a gas mark 4 180C 350F oven for 20 - 30 minutes until pastry is golden brown and the filling is piping hot!

Using the recipe above replace the bacon with the cheese! This can also be frozen until needed like the pie above.
