    Dexterdog's Pork, apricot & ginger burgers

    Ingredients:
    1 chopped onion
    500g pork mince
    fresh grated ginger (its up to you to decide amount depending on how you like it)
    chopped dried apricots (see ginger above)
    chopped fresh parsley (see above)

    Fry the onions and ginger in a small amount of oil until soft. Put the mince into a bowl, add cooled onions and ginger. Add apricots and parsley.

    Shape into burgers then put in fridge to chill.

    Cook in the oven for 10 minutes each side at 180C.

    Serve with cous cous and a carton of greek yoghurt mixed with the juice of half a lemon and some chopped parsley.

    This recipe was given to me by my god-daughter. Its one of the best ones I've ever tasted! DDL

      Will give them a try. I'm not a big pork fan and hubby isn't keen on fruit in his savouries.

      You may convert us both.

                  Gave these a try last night and they went down really well. Both Mr E and I enjoyed them. Miss E refused to eat "burger". Served with a slightly spicy homemade tom sauce (my own toms) and Nero di Toscana kale (from the lottie - no caterpillars). Meant to do rice and forgot so it was salady bits and bread. And I have permission to make them again.

                    Hiya DDL - tried these tonight with some home made bread rolls from my new bread maker (had it about a month now and am still like a kid with a new toy!). Really nice although I did substitute the parsley for corriander as I had some in the fridge and didn't want to go down the garden to the greenhouse to pick some parsley! OH liked them too, a much healthier alternative to junk food, thanks for the recipe.

                    Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                        Sounds good to me DDL. I love fruit in my savouries. Chicken and prunes. YUM ! Lamb and nectarines. Scrummy ! If your not keen on pork Earthbabe, you could make them with turkey.

                        I never buy mince for burgers. I buy the meat and process it in the food processor. That way I know what went in it - none of the grissle and fat.

                        From each according to his ability, to each according to his needs.

                          Thanks for that Alice! It was a recipe given to me by my god-daughter Alex who cooked these when I last visited her in Bournemouth last year. A fave with me. Perfect with some of Earthbabes green tomato chutney! DDL

                            Dexterdog,finally got around to making your pork,ginger an apple burgers. They went down a treat .Trouble is I've now got orders to make up several batches so that the two eldest can take them home for their freezers! Still, I suppose thats what moms are for Anyone who hasn't tried these burgers,give them a go! My kids definatly would recomend them.
