Dexterdog's Chicken Biriyani aka Ready, Stready, Cook!
Ingredients:
4 chicken breasts, skin removed and sliced
1 onion, peeled and finely chopped
1 or 2 cloves garlic, crushed
2 tbsp olive oil
1/2 teasp cardamon pods, crushed, pods removed
1/s tsp mild curry powder
50g butter
200g rice
1 chicken stock cube
Heat the oil in a large pan (frying pan is good) and add the onion, cook gently till softened.
Add garlic and chicken pieces and cook gently for 3 - 4 minutes. Add cardamon seeds and curry powder. Mix well.
Add butter, stirring until melted and add the rice. Mix well until all rice grains are coated in the butter.
Add sufficient boiling water untill covered and cruble in the chicken stock cube, mixing well.
Bring to the boil, then reduce to a simmer. Place lid on pan and cook for around 15 minutes until the rice is cooked.
