    Celeriac Risotto

    Celeriac Risotto

    I just made this up, forgive the rough measurements.

    serves 3-4

    one celeriac, peeled and grated.
    one glass white wine
    1 pint stock
    about 250g arborio rice (not long-grain, it just doesn't work)
    1 onion, finely chopped
    bit of oil
    flavourings: mushrooms, peas, sweetcorn, carrot, whatever you've got.

    Fry the onion in the oil until soft.
    Add wine and rice, stir for a couple of mins.
    Add stock, simmer for 20 mins. Add veggies, and leave on the hot stove (heat turned off) for another 10 mins to steam gently.

    Stir in some butter and/or grated cheese to serve. It's yum, I'm eating some right now.

      What's the difference between celeriac and celery?

      I usually make salad-grated celeriac with apple and mayo(wee drop).
      You can add some raisins or/and grated carrot

        con and I love it roasted, pan roasted in olive oil with parsnips and sweet potatos, and roasted garlic mmmmmmm

          Have grown lots of this wonderfully smelly stuff this year and enjoy it best raw.
          Coarsley grated, salt & peper and a little mayo - wonderfully crunchy and tasty.
