1 large piece smoked Finnan haddock fillet (try to get the undyed type)
1 onion, peeled and chopped
1 cooked and diced potato
1pt full cream milk
1oz butter
salt and pepper
Place the haddock in a pan and cover with the milk. Bring to the boil, add the onion and simmer for 10 - 15 minutes until the fish is cooked and the onion soft. Remove the fish from the milk and flake into pieces, removing the skin and any bones. Return this to the milk. Bring to a gentle simmer and add the potatoe pieces, butter and season to taste. Heat thoroughly and serve hot with crusty bread.
For a more creamy taste, use less milk and add double cream when warming through at the end.
