  • Mushroom Help anyone?

    We have just got loads of mushrooms, I mean they are in a carrier bag and so I'm looking for a easy recipe for mushroom pate, have looked but can only find complicated ones with tons of ingredients that I have'nt got.
    Hubby says can we make tartex??

    Also hoping that one of you culinary wizards can help me with a good mushroom soup ???

    Mum used to make a wonderful soup with mushrooms and milk but the recipe has been lost in time and house moves.

    Any help would be most gratefully appreciated.

    Garlic mushrooms for tea tonight.

    My mushroom soup was simply made by gently frying a chopped small onion, followed by lots of mushrooms, until soft, then add milk to barely cover, heat to nearly boiling, whizz it in the blender, season with salt (not too much) and pepper.

    If you prepare mushrooms ready for frying, then dip in melted butter, and freeze like that, they keep a month or so and are fit for accompanying breakfast.......
    Flowers come in too many colours to see the world in black-and-white.

      Brilliant, thank you so much for that, it sounds really yummy & I will defo be giving that one a try.

      The freezing idea is great too although it means I will have to get my finger out and make the rest of the bramble jam with the brambles in the freezer first Lol.

      Still, it is raining today so I could start,

        I'm doing a mushroom risotto this weekend with a mix of mushrooms and some dried porcini. Add shallot (or finely chopped onion), garlic and a few chilli flakes to risotto rice at the beginning and add mushrooms, tarragon or parsley and loads of grated parmesan cheese at the end of cooking. Only thing to remember is to cook the mushrooms separately otherwise it will be an unappetising brown colour which may put you off. If you just stir your cooked mushrooms in at the end it won't stain the whole lot. (I used rose wine in a risotto once and ended up with pink rice with the prawns...different....lol)

        If you can't be bothered to stand over it for 30 min, I think Delia Online has a baked mushroom risotto recipe. She also has a mega mushroom soup recipe from her Xmas book but a bit long winded with chopped walnuts, cream and sherry in it.

        I also do something similar with pasta. Goes well with pasta shapes. Onion, garlic, chilli and mushrooms fried together then add some creme fraiche or single cream and toss with hot cooked pasta. Can add grated parmesan or chopped herbs before serving as well.

        Otherwise for a snack the same mix as for the pasta is great on hot granary or wholemeal toast.

          I was reading through the cookbooks last week, and came upon a recipe for pickled mushrooms. Went to Bakewell Farmers' Market last Saturday, bought loads of mushrooms with a view to pickling them. Can I find the recipe - NO. Any suggestions would be very welcome.

              Oh thank you all so much. The rissotto's sound amazing it's making me hungry just reading it.

              The pate also looks like it will be easy to get together and tasty too.

              We froze some of them sliced and dipped in butter as suggested, and are in the process of drying some in the airing cupboard.
