    Hi All,

    Would you believe I am unable to find chilli flakes !

    Anyone know where I can get these ??

    Try a Chinese or Indian shop. I get mine from there.

    be prepared to buy a big back though!

            Sitting giggling at this. Last year I stuck my dried chillis in a blender and gave them a good blast.

            For about 40 minutes I was choking - nose streaming - eyes like golf balls. Never realised the chilli dust would explode everywhere!!

            Still - it was worth it

                what do you use chilli flakes for? I have lots of dried chillis from last year but only ever really use them in beef chilli. I really should try them in more things.

                  So did I! I've also rubbed my eyes with my hands straight after chopping chillies too -

                  When I don't have any chillis or garlic of my own I prefer to use "The English Provender co" Very lazy range - garlic, red chillies and ginger. They come in little square jars and you just measure out what you need. Then I reuse the jars for other things.

                  I use chillis in anything I want a bit of extra heat, or zing - just be careful how much you put in tho, if you don't want anything too hot.

                    has anyone made thai sweet chilli sauce, i would love to try and make my own as i use so much of the stuff

                      I used to use a Ainsley Harriot recipe - then I gave the book to the charity shop! It was the best one as well! If anyone has it, I'd be grateful. Thanks.

                        I think somebody posted a sweet chilli sauce recipe on here once. I'll see if I can find it. I'll edit this post to add link if I do.

                          Magz, another good use for chilli flakes is a DIY arabiatta sauce. Some poeple add extra stuff like balsamic vinegar, lemon zest or a touch of sugar but at it's most basic it's just olive oil, garlic, tomatoes and chili flakes cooked up together. It's great with prawns and pasta

                            Try this one ladies!

                            Thai Sweet Chilli Sauce


                            Ingredients:
                            8 large red chillies
                            240 ml water
                            240 ml red wine vinegar
                            500g white sugar

                            Preparation:


                            Method:
                            Split the chillies, remove the seeds and the ribs then finely-chop the pods. Combine with the remaining ingredients in a saucepan and bring to a simmer. Cook gently for about 25 minutes then bottle.

                            The sauce will keep for several weeks in the fridge and makes an excellent dipping sauce for Thai-style chicken or prawn satays.

                            Yum I have not tried this recipe but it looks good and like what the cheffs on weekend TV did last weekend on Saturday kitchen think it was!

                            As for blitzing your chilli's in the blender I supose you could put a just damp *not dripping wet* tea towl over the blender lid while you blitz it. It might just stop the chilli dust from going in your eyes
