  • Herby's Super Spag Bol

    One of my faves, especially making from scratch. Serves 3.

    Chop 1 large red onion and add to a large pan with olive oil and a knob of butter and cook on a medium heat until every things cooking and turn the heat down. Keep stirring the onions so they don't stick, just simmer for 20 mins.

    When the 20 mins is nearly up throw in a few cloves of chopped garlic, some roughly cut smokey bacon and add some crushed sea salt and black pepper. Now turn the heat up and add some red wine, something that's fairly woody will go well with smoked bacon. Keep the heat high until the wine evaporates and add 500g of minced beef or even a mix of beef and lamb!

    Wait until the meat is browned and add some good quality tinned tommies like the Napolina type, one can will do just fine. Next add a 1 sprig of basil and 1 heaped table soon of oregano and mix in. If you want to thicken up the flavour you can add some more salt and pepper or even a couple off tea spoons of sugar.

    Another nice touch is to add some freshly chopped chilli.

    Finally leave to simmer for about 1-2 hours stirring every every now and then.

    I don't believe its as good as you say it is so theres only one solution.....
