I just saw this recipe online, which is apparently a traditional Good Friday meal (in Cajun country I assume) and thought some people might appreciate it as it uses up the parts of plants that lots of us tend to struggle to use up. They say you can use any greens. Carrot tops, beet tops, dandelion leaves. I might try using up some of the ground elder that is trying to take over a corner of my back yard! Let me know how it turns out if you make it!
