Ginger leeks

  • Ginger leeks

    Supper was due to be baked salmon fillets and 'oven chips', but the only 'green' veg in the house was leeks, and I usually only use leeks in casseroles, so I experimented
    Chop up about 4 smallish (or 2-3 large) well cleaned leeks
    heat some oil in wok
    add about a level teaspoon of ground ginger (the equivalent in fresh would probably be even nicer) and allow to become really hot (but not QUITE burnt)
    Add leeks, and stir-fry until thoroughly softened

    That's it!

    i would never have thought of putting ginger with leeks, sounds interesting.

      I luurve ginger in most things but never had ginger leeks (apart from when they got rust! Lol

        I probably wouldn't have thought of it apart from to accompany 'economy' salmon. I used to have a chinese cookbook which recommended ginger to 'lift' the taste of fish which, while still definitely fit to eat, is not as superlatively fresh as one might wish. I will definitely be cooking ginger leeks again!
