  • Fantastic Apple cake!!!

    I found this really simple recipe and have made two cakes in less than a week because it seems to keep dissappearing so I thought I would share it!!!! Great use for all those lovely bramleys when you've had enough of pie.

    Spiced Apple Pie

    10oz Caster Sugar (less if eating apples)
    8oz Self Raising flour
    4oz Butter / Margarine
    1 heaped teaspoon of mixed spice
    1 egg
    Pinch of salt
    8oz Apple sliced or chopped reasonably small (1cm)

    Grease a 2lb loaf tin and line with baking paper preheat oven to 180oC (160oC if fan assisted)
    Cream butter and sugar until light and fluffy
    Sieve flour spice and salt add to butter and sugar and mix well (will be like breadcrumbs)
    Add the beaten egg and mix well, it will be quite dry but don't worry the apple will provide moisture.
    Mix in the apple and put in tin bake for 1hr 15min
    Sprinkle a bit of brown sugar on top when you turn it out and enjoy.

    Fantastic hot or cold!!!

    Mmmm!
    Is this the sort of cake which is more of a pudding, served with custard or cream, or is it a cakey cake? (if you see what I mean)

      Either I have been useing it as a cakey cake but it would be equally good with a bit of custard, its just soooooooo easy and it freezes although neither of mine have made it that far yet

          I used pears to make the crumble-topped pear cake that was recently in a Sainsburys magazine. That was nice - no flour (apart from the crumble, which could be left off) so good for those who cannot eat it.
          Definitely more of a pudding though.

            Could you post the recipe please Waffler. Crumble topping doesn't seem to work with gluten-free flour for some reason. Might try it with oats though as I can eat those.

              fantastic. just made this one and ive discovered that it seems to dissapear when my back is turned. can you advise on how i can prevent this??? :-)

                Hi Elmo, great recipe. Just what i'm looking for. Have apples from ny two trees and was wondering if i could do something different with them The fact that the cake can be frozen is a bonus. Guess what i'm doing tomorrow.

                  Earthbabe - I know what you mean about the gf flour - I mix in some crushed gluten free digestives with the oats - makes it nice and crunchy

                    Hadn't thought of that martini. Thanks for the tip. I'd probably leave a lot of the sugar out though as I seem to remember the gf digestives being almost sickly sweet.

                      ooh yes anything gluten free would be a bonus. I can't get a decent gluten free flour mix that doesn't taste like polystyrene.

                          Hiya,
                          I have tried Doves, Orgran and another one I can't remember the name of. I have just tried banana loaf with hemp flour, little tip, don't try it. Came out green and tasted very odd.

                            Do you have a breadmaker? cos I have a very good little book called gf bread and cakes from your breadmaker.
