I found this really simple recipe and have made two cakes in less than a week because it seems to keep dissappearing so I thought I would share it!!!! Great use for all those lovely bramleys when you've had enough of pie.
Spiced Apple Pie
10oz Caster Sugar (less if eating apples)
8oz Self Raising flour
4oz Butter / Margarine
1 heaped teaspoon of mixed spice
1 egg
Pinch of salt
8oz Apple sliced or chopped reasonably small (1cm)
Grease a 2lb loaf tin and line with baking paper preheat oven to 180oC (160oC if fan assisted)
Cream butter and sugar until light and fluffy
Sieve flour spice and salt add to butter and sugar and mix well (will be like breadcrumbs)
Add the beaten egg and mix well, it will be quite dry but don't worry the apple will provide moisture.
Mix in the apple and put in tin bake for 1hr 15min
Sprinkle a bit of brown sugar on top when you turn it out and enjoy.
Fantastic hot or cold!!!
