  • I know its too late but.....

    Found tis recipe today when i was looking through my daughters cookery book. Its for corgette bread.
    Ingredients
    350g (12ozs)plain flour.
    " " castor sugar.
    1 1/2 level tspbaking powder.
    1 level tsp salt.
    175g (6 oz ) shelled walnuts roughly chopped.
    4 eggs lightly beaten.
    150ml (1/4 pint) veg oil.
    2 tsp grated lemon rind.
    350g (12oz) corgettes.

    1. Grease two 700 gram(1 1/2lb) loaf tin.
    2.Sift the flour, sugar baking powder and salt into a bowl and stir in the walnuts. Mix the eggs, oil, corgettes and lemon rind. Add to the dry ingredients all at once and stir until moistened.
    3. Spread mixture evenly in tins. Bake at 180C (350F) mark 4 for 1 hour.Cool in the tins for 10 mins.Turn out and cool completely.

    This ammount makes two 11/2 lb. loaves.

      Ha, not to late for me. We always sow a few seeds in August to plant into the tunnel after the tomatoes come out. They generally fruit up until the end of november when mildew gets them.

        Oh I like that idea, will be planting some late ones next year.

        Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

        Which one are you and is it how you want to be?

          Mmmm, that sounds nice Bramble - one to keep in mind for next year's glut! Although... I still have 1 courgette in the fridge.... I doubt it weights 350 grams though

            Has anyone actually bought that book that's been advertised in the gardening mags (1000 recipes for courgettes or something like that) I think it's about £8 and I was going to order one for my daughter who had so many last summer that she couldn't give them away.

              Yes Rusty Lady I have the book and it is exactly as it says on the label - full of recipes containing courgettes!

                I got it as part of my MOM pack - I was nearly tempted to gow more courgettes so I had a glut Sense prevailed though ..... & I still had a glut

                  Rusty Lady, Yes worth every penny, it's been a lifesaver as I've had so many courgettes this year. Can recommend Chocolate Courgette Cake, Courgette Muffins, Aubergine and Courgette Crumble, Stuffed Pasta with Courgette ...
