    You have my sympathy but how about this low cal icecream?
    150g fruit (sharp flavours work best, blackcurrants especially fab)
    350g yoghurt
    100ml single cream or creme fraiche
    sugar to taste (or can use fructose)

    put in a blender and whizz up together and put in an icecream maker to churn. Then freeze.

    I use various flavours of yoghurt, vanilla and coconut work well. Eat this a lot in the summer, good use for allotment produce too, get about 6 servings from the above recipe.

    I also love fruit cooked gently in orange juice with a nob of butter and sugar/honey to taste to eat with yoghurt, add something like chopped almonds, chocolate chips or coconut for a topping.

      That sounds great! My dad is type 2 diabetic and I struggle to find puddings which I can offer him - not that he visits for dinner often!

          I love the slow cooker recipe because you don't get a 'skin' on top like with baked rice pudding.

            The skins the best bit of a good rice pud! We used to fight over it when I was growing up, and I still love it now! Mmm!

              It would be such a boring world if we all liked the same things!!! I love the skin on milky coffee and on custard, but not on baked rice pudding!

                They sound delish. Hadn't thought of using the crock pot for puddings. Love rice pudding although I have become a big fan of the skin on top since I started baking them to have cold as an alternative to porridge for breakfast when I am up at 5am for work.

                The chocolate gooey fudgey one sounds heavenly.

                  Ive got a slow cooker that has a divider in the middle in theory you can cook main and pud at once tried it once and it was OK

                          Hi, DDL,
                          Saw this recipe for baked apples and thought of you.

                          Serves 4.
                          4 bramley or other cooking apples
                          FILLING>
                          55gram sultanas
                          55gram dried unsulphered apricots finely chopped
                          25g currents
                          25g figs finely chopped
                          1tsp pure fruit apple and pear spread
                          2tsp fresh orange juice
                          2tsp dried coconut shavings
                          METHOD
                          preheat oven to 350f 180cgas mark 4.
                          Put all the filling ingredients into a mixing bowl.
                          Stir together and leave for about 20 mins to let the flavours blend.
                          Wash the apples and remove the cores.
                          Cut the apples in half width wise and place on a baking sheet skin downwards.
                          Stuff the mixture into the centre of the apples, it will spread over the top which is fine.
                          Cover with foil and bake in the oven for about 25 to 30 mins or until apples are soft.
                          If you try it let me know how it turned out although think i will make it over the weekend.

                              Going back to rice puds - it's really nice if you put a cinnamon stick in it while it's cooking (good cold too)
