  • Potato, pea and broad bean warm salad

    For one person Take:
    A handful of new potatoes from the lottie or garden
    A handful of peas from the lottie or garden
    A handful of broad beans from lottie or garden.

    Clean, slice potatoes
    Depod peas and beans

    Throw into cold water until about 10 mins before you are ready to serve.

    Put water on to boil, then turn down to simmer slowly after about a minute. When potatoes are just soft but not falling apart [which is why you turn them down - check with a sharp knife], drain the water out.

    Add into saucepan:
    Big spoon of mayo [we have low cal but any will do]
    Medium spoon of french dressing
    Big spoon of yogurt [zero cal but again, any non-fruit flavoured will do]

    If there is not enough sauce, make sure you add more as this mustn't be dry - it needs to be just on the dry side of sloppy

    Add salt/pepper to taste.

    Mix and serve up.

    Oh gosh, it was good and I wanted to write it down.
