I made a carrot cake today using a new recipe. Very, very tasty, I did 1 1/2 times the quantities and used up the extra batter in muffin cups. I'm not a huge fan of walnuts so I left them out...

Apparently I eat the one from the Cranks' book , it is apparenly easy to make,I can vouch for it's flavour!

I don't bake much - don't like cakes - and my husband doesn't need the extra calories - but that recipe sounds great. I think I will make it for my son in law. He loves cakes.
