        I used to own a restaurant and this foolproof recipe was always the absolute favourite. I make batches in trays and freeze them in portion sizes - yum yum!

        Ingredients
        For the pudding
        150g/5oz dates, stones removed, chopped
        250ml/9fl oz hot water
        1 tsp bicarbonate of soda
        60g/2¼ oz butter, softened
        60g/2¼ oz caster sugar
        2 free-range eggs
        150g/5oz self-raising flour

        For the toffee sauce
        200g/7oz butter
        400g/14oz brown sugar
        vanilla pod, split
        250ml/9fl oz double cream

        Method
        1. Preheat the oven to 180C/370F/Gas 4.
        2. Mix the dates, bicarbonate of soda and the water together in a bowl and leave to soak for ten minutes.
        3. In a clean bowl, cream the butter and sugar together until light and fluffy.
        4. Still stirring the butter mixture, gradually add the eggs, making sure they are well mixed in.
        5. Still stirring, gradually add the flour, then add the date mixture.
        6. Pour the mixture into a 20cm/8in square cake tin. Place into the oven and bake for 35-40 minutes, or until cooked through.
        7. To make the sauce, melt the butter in a thick bottomed pan over a medium heat.
        8. Add the brown sugar, vanilla pod and cream and stir well. Simmer for five minutes.
        9. To serve, spoon out a portion of the pudding onto a plate and pour over the hot toffee sauce.

          ohhhhh amanda, do you think it is too late to make this tonight????? it sounds F-A-B......and i put on half a pound at slimming tonight...it may be more like half a STONE next week!!

            Wait until tomorrow and enjoy it properly, with some whipped cream and/or ice cream then just make sure your pockets are empty and you've had a hair cut before your weigh in next week, lol.

              I love Sticky Toffee Pudding, but as I loathe and despise dates (and any other nasty squishy dried fruit) in my cakes, I very rarely find one that I can eat
              If I made this one, could I sub the dates for more flour Amanda, or do you think it would end up too dry? Or, just leave the date mixture out, with no substitute?

                Hmmm.... good question as it's the dates that make it sticky.

                I don't like dates either and neither do my OH's kids but they can't get enough of this pud. After I soak the dates I whizz them in the food processor so that I get the sticky moistness but without the date lumps. Perhaps adding some syrup and treacle might work if you can't go with the whizzed date option.

                  I followed a James Martin recipe for sticky toffee pud and the date cake bit was gorgeous! So light and moist! I didn't make the sticky toffee bit, just spread some lemon butter icing on it and it was lush!

                  It was a similar recipe to yours amandaandherveg....where you soak and blitz the dates with a hand blender a add bicarb.

                  The other one I made was a Delia's Iced Date and Walnut cake - yummy but not as delicious as the James Martin one. Texture of James's cake was just like McVities Ginger Cake but without the gingery taste.

                    A couple of friends from the USA visited me recently, and having discovered Sticky Toffee Pudding they couldn't get enough of it. So I'll send them the recipe, and see how they get on
