  • Using left overs and bits of things..

Tried a new recipe today that worked out a treat, with the whole family, including fussy 10 year old daughter, raving about it so thought I'd share it here.

Using the breadmaker I made up some roll dough. While that was in the breadmaker I marinadedsome chopped up veg (brocolli, yellow courgette, leek, mangetout, baby carrot, new potato) in soy sauce, runny honey, sunflower oil and grated ginger then cooked it in the wok (and added some left over risotto from yesterday to bulk it up) and left it to cool.

took dough out of breadmaker and rolled it into 5inch circles, piled mounds of cooked up veg into the middle and gathered up and sealed all the edges.

placed the sealed edges on the bottom, left it to rise for about half an hour and them popped them in the oven for about 15 minutes.

had them still warm for tea with some salad and a mint & cucumber raita. 99% of our tea came from the garden - first time ever and it was brilliant!

Can definately recommend and the varieties are pretty much endless I'd imagine

    Thanks for that Scottishnewbie.
Some of our best meals have been Bitsies - bits of ths and bits of that.
A Bitsy = a meal made from all the bits of leftovers in the fridge and your idea of making them into bread parcels might be good.

From each according to his ability, to each according to his needs.

Someone I knew used to call that 'enthusiasm' cooking, because you put everything you've got into it.....

Excellent idea there! I like your ingenuity scottishnewbie! Being bread parcels as opposed to pastry would make it filling and substantial rather than calorie-laden.

& Alice, I love your word Bitsies! Bits of this and that for dinner!
