Highly recommended and impressive - and cheap as we will probably all be growing most ofthe ingredients
Ingredients
8 x Maris Piper spuds
4 x fresh beetroot (cooked)
500ml (or 1 pint in old money) double cream
1 clove garlic
1 onion (chopped)
seasoning to taste
Method
Sweat the garlic and chopped onions in a little butter and the cream, and reduce by a third
Slice a thin layer of spuds in a greaseproof tray followed by a thin layer of the cream mixture
Next a thin layer of the sliced beetroot, then continue process til tray is full or you have run out of ingredients !
Bake at 190 (375 or Gas Mk 5) for at least 40 minutes until set.
