  • Beetroot Dauphinoise

    Highly recommended and impressive - and cheap as we will probably all be growing most ofthe ingredients

    Ingredients
    8 x Maris Piper spuds
    4 x fresh beetroot (cooked)
    500ml (or 1 pint in old money) double cream
    1 clove garlic
    1 onion (chopped)
    seasoning to taste

    Method
    Sweat the garlic and chopped onions in a little butter and the cream, and reduce by a third
    Slice a thin layer of spuds in a greaseproof tray followed by a thin layer of the cream mixture
    Next a thin layer of the sliced beetroot, then continue process til tray is full or you have run out of ingredients !
    Bake at 190 (375 or Gas Mk 5) for at least 40 minutes until set.
    Enjoy

    This comes from the head chef at a rather exclusive highland hotel near me so it has graced the plates of the rich and famous before your good selves.

        Decided not to grow beetroot this year as no good recipes! This one sounds great. My OH will be pleased

          Eskymo posted a recipe for a Polish (as in Poland,not Mr Sheen) Beetroot Soup which also sounds the business - you can find it in the Celeriac thread (!) in this section.
          I know what you mean about recipes for beetroot - few and far between!

              Hi Nicos.

              If I get chance i'll watch Victorian Kitchen video. Theres a recipe on that for a soup that uses ham, potaotes, carrots, onions & Rhubarb

              I'm off to try and track down some Kestrel tatties now as they seem to be as rare as roking horse compost

                If you want beetroot recipes go to www.uktvfood.co.uk they have loads. Even chocolate and beetroot cake!! There are some rhubarb ones aswell.

                    Sewer Rat if you want a recipe I will know the best site!! I love collecting and reading cookery books so the internet with all the different cookery sites is just great. It drives my husband mad. Some of the recipes on that site have video footage to go with them. It is a good site for recipes.

                        Nicos there are thousands of recipes. I couldn't possibly cook them all !!! I do love cooking though and if I had my way I would cook something different every day. My husband on the other hand hates change and loves nothing better than a roast dinner. I've seen a beef goulash soup with dumplings on Delias site today. It looks lovely - I might try and sneak it in next week!!

                          When our kids were tiny..and would leave many types of veg...we used to give them veg soup made from all the veg they said they didn't like (peppers, sprouts,kale,onions ...infact most of what we grew on the allotment!!!) -all liquidised, and served with home-made croutons smothered in garlic and chilli. Not a drop was left and these left-over veg soups are a favourite to this day. If they only nibbled a small amount of veg presented with their main course, there would be no fuss as we knew they had already had their veg! One step ahead eh??

                            Just printed off your recipe sounds scrummie, will try it at weekend. Also hope you don't mind posted it to my friends overseas...they love trying out new recipes...
