I've made the chutney, it's a glorious colour, can't wait to try it but I'd like it to mature a bit too!
Think I'll have a go at the cake next week!

Is the beetroot raw or cooked first for the beetroot cake?

I used the beetroot raw, just washed it, then peeled it, then grated it.

Tried the pickling but not a success vinegar far too strong - doing something wrong there obviously. But simply, as long as they are Globe beets, I find boiled -for up to 3/4s of hour for biggest - then skin rubbed of , and eaten while still warm, very sweet, very delicious. The longer beets i find are too starchy.

boiled for 45 mins? Is there anything left after that?

I just steam/boil them for about 10 mins. If they are big, I quarter them before steaming.

I will leave the effects of a tummy upset to the imagination. Sufficient to say, that is why I don't eat beetroot. I can't remember whether I liked the taste, it was too long ago.....

Don't forget lovely and simple smoothies.

                                Beetroot and apple.
Or beetroot, carrot and orange are just 2 lovely tasty smoothies.

I cook all the veg while cooking a main meal and then just blend the next morning with the fruit juice, but you can use fresh fruit if you prefer and then add some water if it's too thick.
