Hiya, i have grown too many beetroots (about 20!) and there all ready at the same time, is there anything i can do with this many?! except give them anyway!!!

300g cooked beetroot cut into 5mm dice
150g onions, peeled and chopped
120g cooking apples, peeled and chopped into 5mm cubes
40g brown sugar
1 tsp fresh finely chopped ginger
80ml malt vinegar
1 tsp salt
1-2 chillis (depending how hot you like it!)
1 large clove garlic (optional)
mix all ingredients together in saucepan, Bring to a boil whilst stirring regularly then keep stirring until the sugar has dissolved.
cover and simmer for about 45 mins (stir occasionally)
Pour into clean sterilised jars, seal then leave for at least a month (if you can)

Roast them, 2 each, if there's 2 of you I make that 5 nights worth. No probs.
That's what I would do too if I only had 20, delicious.
I've grown loads cause I love them, will also be pickling some and grating some to add to salad and pasta dishes.
Might even have a go at coombers chutney, sounds lovely!

that cake sounds interesting? is it like carrot cake?!
here you go, i sometimes put walnuts instead of all the sultanas for a bit of crunch
250g self-raising flour sieved
2tsp baking powder
150g soft brown sugar
100g sultanas
200g beetroot peeled and grated (about two medium sized)
150ml vegetable or sunflower oil
2 medium sized eggs beaten
Preheat oven to 180C, 350F or Gas Mark 4
Grease and line an 8" loose based cake tin (I used a 2lb loaf tin for ease of cutting, worked just as well)
Mix together the flour, baking powder and soft brown sugar in a large bowl
Add the sultanas and grated beetroot mix in with hands making sure all beetroot is covered in the dry mix
Beat the oil and the eggs together and add to the bowl
Combine with either a wooden spoon or electric mixer
Spoon the mixture into the tin and bake for 50mins - 1hr
