Whats the best way to do it? I have never done it myself but i love the taste! Do i need to boil the beetroot first? how long do i boil for. Do i roast along with parsnips, spuds etc????
They take ages. Get em going before the tatties and well before the parsnips. Get em when they are golf ball sized and chuck em in without a par boil. At least that's what I do anyway.
Depends on how you want it, you can roast as parsnips (although it takes longer) or if you want to slice it for salads etc or eat whole then I simply scrub and wrap in oiled foil. Chuck in the oven for about an hour, leave to cool and then simply rub the skin off and slice or whatever. It's quite a no mess way of doing it and I don't end up with such stained fingers as I do when I peel it and chop raw. I always do the stuff I'm going to pickle like this too.
