    Have you a favourite easy peasy cake recipe to share?

    I saw these on 'This Morning, Phil Vickery' great for kiddies, picnics, parties.

    Ice cream cones with choc sponge filling and choc tops

    You bake the cake mixture inside the ice cream cone - ingenious!

    Ingredients
    10 ice cream cones with a flat bottom
    115g butter, softened, at room temperature
    115g castor sugar, at room temperature
    2 eggs, lightly beaten, at room temperature
    75g self raising flour
    15g cocoa powder
    10g cornflour
    150mls buttermilk
    50g chopped chocolate, not too small

    For the topping
    10 large marshmallows
    100g milk chocolate, approx
    100g chocolate sprinkles, approx

    1. Pre heat the oven to 190° C , gas5

    2. Cream the butter and sugar together, then add the cocoa powder and cornflour
    Gradually add the egg (at room temp) and beat well

    3. The stir in the buttermilk, then add the flour and chopped chocolate and mix well

    4. Next fold in the chopped chocolate

    5. Spoon into the cones, nearly full (we want a nice dome on top) then carefully bake in the pre heated oven for 25 minutes

    6. Once cooked cool

    7. Melt the milk chocolate over a pan of gently simmering water

    8. Dip one side of each marshmallow and stick on top of the cone, then repeat for all the cones

    9. Finally spoon over the remainder of the chocolate covering the top completely, sprinkle with sprinkles, then chill until the chocolate sets

    10. Serve dusted with icing sugar

      Cheers, but not sure how to move, do I just repost in STT?

      We made these yesterday for some kiddies (and bigger) and also mini cakes in petit four cases. They went down a treat

        I think you can edit it then it will move or PM a MOD and they will move it.

          This is my fall-back when I can't be arsed opening a recipe book:

          Really Incredibly Easy Pound cake

          250g marg or butter
          250g sugar
          250g self raising flour
          250g eggs, weighed with their shells on

          optional extras for flavouring: vanilla/lemon zest/orange zest/chopped apples/raisins/cinnamon

          Cream the butter and sugar and add the eggs one at a time, beating well after each one. Fold in the flour. Bake in a 2lb loaf tin or other baking dish of a similar volume for about an hour at 180degC or until done.

          You could also make this into a chocolate cake by substituting 50g of the flour for sifted cocoa

          Dwell simply ~ love richly

            5oz Self Raising
            1 large egg

            Mix the lot in a bowl until smooth and pour into a loaf tin.

            Bake on gas 5 for about 40mins

            Very simple sponge.

            For something a little more tasty line the bottom of the tin with sliced strawberries, add a little coco powder to the mix and pour the mix over the strawberries. Shove a few squares of cooking chocolate into the mix and bake.

            This will give you a sponge filled with strawberries and melted chocolate that oozes out like hot buttercream. Serve with ice cream.

              Would this work with spelt or some none-wheat grain like barley do you think? I shouldn't eat wheat, as I feel carp afterwards!

                IMHO muffins are some of the easiest cakes to make and they can also be low fat & low sugar.
                I like the type where you mix the dry ingredients then sperately mix the liquid ingredients ( oil instead of butter or marg ) then quickly mix the two lots together. None of this creaming and beating nonsense!

                  could yougive us a basic recipe for the muffins please Lovage?

                  I am terrible at baking, I;m more of a 'chuck it in and see' type of cook. Great for casseroles and stir fry, bad for cakes!!

                    SUMMER FRUIT MUFFINS

                    280g / 10 oz Self raising flour
                    5ml / 1tsp Baking powder
                    85-110g / 3-4oz Sugar, (white or soft brown) depending on fruit
                    1 egg, beaten
                    240ml / 8fl oz Milk
                    90ml / 3fl oz Sunflower oil
                    220g / 8 oz Summer fruit, strawberries, Raspberries, Gooseberries, Blackberries, Blackcurrants, Redcurrants etc alone or in combination. Cut large fruit into small pieces

                    1. Prepare muffin tins/cases, pre-heat oven to 190C
                    2. In a large bowl, seive together flour & baking powder, mix in sugar
                    3. In a measuring jug or another bowl mix together milk, oil and egg
                    4. Pour wet ingredients into dry and stir until just combined, do not overdo this
                    5. Fold in fruit gently, only 2 or 3 strokes
                    6. Spoon into muffin tins/cases and bake for 20-25 mins

                    Works well with frozen fruit ( we make all year round ) do not thaw

                    Low fat, Low sugar and use your own fruit
                    Very quick to make, quick to cook
                    Don't keep long but don't often get the chance!

                        I've always found it easier to remember a basic sponge recipe if I work in ounces rather than grams - basically you use half as many eggs as ounces;

                        6oz butter/marg
                        6oz sugar
                        6oz SR flour
                        3 eggs
                        1 tsp vanilla

                        You can up the ingredients to 8oz each and use 4 eggs, or reduce to 4 oz and use 2 eggs. Simples... If you want a super simple cake use the 6oz mix, chuck the whole lot into a food processor all at once with the addition of a level teaspoon of baking powder and just mix it til smooth. It'll rise fine and taste great. Variations in flavour can be had by adding the grated rind of an orange or lemon / replacing an ounce of flour with an ounce of cocoa plus a tip of a tsp of baking powder...
