    There's your venison on the hoof on the right hand side of the picture. What she was eating was carrots I was growing in a pot down there. And there she is parading on my drying green. At one point I had 6 of the bandits marauding the place. I'm pleased to say we have managed to fence them out as the destruction they did was heartbreaking. I was on the point of arranging for them to be made into bambi burgers. But we've all been spared that.

          LJ, Santa's reindeer are safe just now I think - the deer usually farmed for venison are red, fallow or roe.

            Sorry, can't help it. Deer are farmed at Dunham Park and we always tell the kids that they are Father Christmas's reindeer. It's where they live when they aren't working for Father Christmas!!

              Any venison recipe is improved no end if you add a spoonful of homemade Damson jam to it!

                  The Deer at Dunham Massey are lovely, very used to people, so they will let you get within about 10foot if you tread carefully, I've some piccies somewhere of them! They arent reindeer, but I think Roe deer. We took my Daughter there for the first time this summer and she loved it, but she wont entertain eating venison or rabbit! Mr D says we should do like both our parents did, and not tell us what it was until we'd said how nice it is! lol!

                    Rowan Jelly or Haw Jelly are also good with venison. As for not frying or grilling - not sure about the Red, but Roe steak is beautiful fried in butter with onions.

                      I have only fed the boys venison once - it is just not something that you find on offer here very often and Lidl had it in a while back. It was ready cubed and frozen. I just told the boys it was venison in red wine and they thoroughly enjoyed it. I think the younger one asked afterwards what venison was and I told them. I couldn't eat rabbit - probably because I used to see lots of myxie rabbits when I was a kid.

                        Shirley what is the title of the recipe book? If all the recipes turn out great I wouldn't mind buying it myself.

                          Venison Wellington - Richard Corrigan recipe off the Great British Menu.. it is available on-line, I have tried to attach it as a word doc, but it is too large. I made it for my mother for her birthday, it was absolutely delicious and not as complicated as it seems, although I didn't make the gravy to go with it... and I made a big one so it took for ever to cook, and was still v bloody (just how I like it!)

                            Well, just eaten one of the most delicious meals I have ever had!

                            Shirley, that Rich Venison Casserole was absolutely fabulously fantastically amazingly wonderfully delicious!!! We've just finished eating about 1/2 of it, along with some creamy mashed potato and turnip and with some steamed cauliflower and broccolli! The whole lot was sooo tender, the venison melted in my mouth and the sauce was sooo rich!

                            Thank you for posting it, and making Mr D and me very full and very impressed indeed!

                            For anyone thats wondering whether to try it, dont hesitate, dont even think of hesitating, it is beyond words, yep, that good!

                              Thanks for posting that Sunbeam, I've never tried making a 'Welington' ever, so may have to give that a try sometime soon!

                                It is the Good Housekeeping Cookery Book. My mum had one that she used when I was growing up and learning to cook and she bought me the most recent publication (at that time) soon after I got married.

                                I wouldn't be without it - everything is explained in really easy stages and every recipe I have tried has been superb. In fact, it is so good that I now have two copies for when OH is working abroad so that when I go to visit for holidays with the boys, I have a cook book wherever he is and don't have to pack it (it is quite heavy)!! Yup - I am mad!!!
