    I'm at the end of the peas now, the ones remaining are a bit too full and old just to steam.

    Any recipe ideas for them?

    I was thinking perhaps a soup, but all suggestions gratefully recieved.

    I leave them on, dry them out and rehydrate and make my famous pea soup during the depths of winter.

      Let them dry right out and keep them for seed next year.

          Mange-tout which are over-mature can be treated as ordinary peas for podding. Beyond that as others have said, just let them dry/ripen, and use either for seed or in 'dried pea' recipes.
          Flowers come in too many colours to see the world in black-and-white.
