  • Duck recipies??

    Hi Gang!

    I went to our xmas doo on Saturday (well, I had to, I'm the boss, and had the petty cash to pay for it! ), and got talking to one of my staff and his wife whom I know is an avid GYOer! After telling her all about the GYO mag and the Vine website we got onto talking food and recipies, and she let it slip that she has a glut of game, one of her friends husbands goes shooting and often brings them lots of fresh stuff round (whenever their freezer at home is full), so she asked if I could make use of any of it, and if I fancied a wild duck!

    Of course I said yes, and was sitting in my car having lunch today (I go outside for lunch cos I get some peace, if I stayd in the branch I wouldnt get time to slurp a coffe, let alone eat my butties) when her hubby (one of my staff) came up to the car, tapped on the window and handed me a frozen wild duck on his way into work!

    Normally I just do a standard roast duck, although I have done a crispy duck (chinese style) a few times, but wondered after the great results with the venison recipies from the vine if anyone would mind sharing their favourite Duck recipies, so I can do something special for Mr D and myself tomorrow night, on our last day off before xmas!

    So, have you an extra special duck recipie you'd love to share, or any hints and tips that make your duck the best around?

    I have 3 recipes in a book,"eat better,live better",a readers digest book,
    duck and........bean and vegetable stew
    ....................casserole with peaches
    ....................roast with mango sauce, however I've not tried any of them,glad to pass on one if you fancy any of them.

      Thanks Burniem I ended up roasting it and doing it with roasted veg and a lovely duck and fruit gravy, very very yummy!

      Feel free to post any of the recipies tho, I'm sure I'll get a chance to try them at some stage, especially as it looks like we've now a source of free game every once in a while!

        Lucky you Mrs D. Duck is my very favourite. I can't see one flying past without licking my lips ! I like it roasted - just - nice and pink in the middle, with a nice tart sauce and roast potatoes. Scrummy.

              You need to treat the 'wild duck' totally differently from the domesticated very fatty duck.

              What you have to remember is that the 'wild' duck has had to scrat for its food and therefore does not carry so much fat as the domesticated duck. Roasting the wild variety, you need to be very careful, otherwise you could end up with a very 'caramelised', ie burnt duck.

                Having Duck again tonight, planning on doing a crispy chinese style, as a part of a chinese banquet, I have a couple of recipies, and will post them later, but if anyone has any advice or hints and tips to share for crispy chinese duck, then I'd appreciate it!

                  Well Mrs D how was the duck?
                  There comes a point in your life when you realize who matters, who never did, who won't anymore and who always will. Don't worry about people from your past, there's a reason why they didn't make it in your future.

                    duck is our fave but havnt done one for a while as the ones in the freezer our ours, as in the ones in my avatar.
                    we like good old fationed roast and cassolet, any modern duck recipe is based on an rouet or alesbury or verstions of them bred for fat. as in pound for pound of food you give them they gain weight the quickest.
                    in my opinion this is not the best meat.
                    the bird we ate was maybe 1 kilo but fed four as it was so rich and gamey flovoured. you didnt need to eat more.
                    as i suppose home made bread, one slice for breakfast fills you, supermarket bread you allways want another slice!
                    just be sure the bird you eat has had a good if short life!

                      I think you can use most pheasant recipes with wild duck - they're similar in so much as they're short on fat and big on game-y flavour. When we get a surfeit of game, as happens about this time of year, I tend to just remove the breasts and freeze them in pairs. A couple of duck breasts make very good curry, as they stand up to strong flavours really well. The legs are fed to the dog
