How do i dry herbs parsley mint etc so that i can save them to use in winter

Personally I wouldn't dry parsley or mint because the flavour just diminishes too much. Just chuck them in a bag in the freezer and the flavour keeps really well. The same goes for coriander leaf too in my opinion, if that's any helpThere is a war going on for your mind. If you are thinking you are winning.

I agree with LostGoddess.
I never dry herbs but put them in the freezer. They come out looking good (use from frozen) and retaining their flavour. Only way to go as far as I'm concerned.
From each according to his ability, to each according to his needs.
