  • cooking edzell blue advice

    Hi

    I have harvested some of my edzell blues, but when I have done some research, keep reading they are hard to cook and easy to overdo. Any recommendations for timings?

    I'd deffo steam them, not boil them, unless you want a pan of potato soup - not sure about how long, tho'.

          Blue Potatos.

          I'd heard if you want to keep them blue, dont cut them prior to boiling.

          I also suggest steaming.

            Edzell Blue are floury - best to roast - not boil.

              ok, so I'll try steaming and roasting them and see how it goes. Have a few tiddlers so will not cut them and see if the stay blue

                So bf steamed in microwave and then baked (our short cut for baking potatoes) and they were yummmy Have quite a few to get through so glad we both enjoyed them

                  If you like the "heritage" coloured tatties,you might like highland burgandy red,salad blue and shetland black,all of which will retain some colour if steamed.

                    Will def look into them, only heard of the Shetland black. So much more interesting to grow something different than the usual tatties
