  • heaps of beetroot!

    I have pickled my beetroot before but no matter what recipe I use they always seem very vinegary' I have used spiced sweetened malt, wine and clear vinegar in the past!
    Please can anyone help as I love beetroot.

    I also thought mine was too vinegary....so I rinse it under cold water before serving - just takes the edge off it.

        I use a recipe (below) that includes sugar and diluted vinegar, I have adjusted it to use only half a cup of sugar. It comes out just to my taste and not too vinegary.

            I much prefer beetroot cut into wedges and then roasted for about 40 mins, with a drizzle of olive oil and sprinkled with rosemary. Although this doesn't solve the problem of long term storage I know. But do give it a try.

              do you roast this peeled and covered with say tinfoil? sounds very yummy, I can eat beetroot like apples, in fact I prefer beetroot to apples! just makes your fingers soooo red, and your..........ssshhh.............wee wee

                Now that last bit is a surprise and a challenge. How many beetroot do I have to eat to make a difference?

                      COMPOST CORNER........I don't know- never counted! but I can eat 3-4 big'ish ones straight off, so that I guess would be a starting point.
                      I know of people who actually went to Doc's about this!!!!! bless

                        I've grown some white beetroot this year (seeds got from the Wisley Meet seed swap), but no matter what I try (boil, bake microwave), they turn greyish when they cool. I thought it was because I'd overcooked them, but that hasn't made a difference. They taste good, and have lovely leaves to use as spinach, but I don't think they look right
                        I could not live without a garden, it is my place to unwind and recover, to marvel at the power of all growing things, even weeds!
