Rowan berry recipe's please....

    Could be interesting!, Rowan Jelly is a traditional accompaniment to venison and mutton, chutney would be nice, for wine if adding wheat, use fungal amylase, boiling water!!, cold process with pectic enzyme/Rohament P, otherwise Mr Berry is on the mark!, red conc' or raisins will give body and vinosity, rowan, hawthorn and rosehips are generally lacking in tannin, so use raisins in your must or cheat and add wine tannin powder, raisins are better and more subtle..
    Eat well, live well, drink moderately and be happy (hic!)

      Just bumping this thread with a question:

      Yesterday, I thought it would be a good idea to collect rowan berries to make jelly. I live in a built up area and so decided that it would be best if I went into the countryside for the berries so that they would be relatively 'untainted' by exhaust fallout. I drove around for some time, but each rowan tree I came across had no berries on it, yet the ones in town are laden. Is there any reason for this?

          Well,not in the same qualntity that they would be exposed to here in the middle of Leicester, anyway

            Bitter rowan berries, take a look at the schnapps recipe on this page Rowan Schnapps - Recipe.
            Basically it says the berries are best used after the first frost. But you can pick them and wash them then freeze them for a couple of weeks. This makes them less bitter.
            Hope this helps. I think I will forget the jelly and make the schnapps...hic

              Rowan....Another tree we dont really see round here....I can console myself a little with the millions of chestnut trees nearby.

                I know that sewer rat rates the jelly highly, but I finished up chucking mine out last year cos I needed a glass jar quickly! Shan't be making any more as I wasn't impressed. Far more nicer things to make jelly from in my estimation!
