I know there has been a number of recipies for using up cucumbers, but this is so easy and makes a good, low calorie lunch.
4 - 6 cucumbers (mine were outdoor marketmore, but a bit 'fat')
6 ripe tomatoes
1 chilli or to taste
2 chicken or veg stock cubes.
1.5 pints of water
Peel the cucumbers, quarter, and remove seeds if they have gone 'hard', otherwise don't bother. Chop into bits. Add the tomatoes and chilli. If you wish, remove seeds from the chilli, otherwise just cut off stalk (all my scotch bonnet went in ). Add the water and stock cubes and boil until everything is soft. Liquidise and serve. It's really nice as a 'cup a soup', with 1fl oz of milk added to the cup to make a cream of cucumber soup, and it tones down the heat a tad.
