have grown loads of it but not really sure what to do with it apart from sniff it, any ideas?

Try slicing it lengthways into strips ,sliced courgettes and onions, glug of olive oil, splash of balsamic vinegar , sprinkle on the thyme then roast for about 45 mins. Or, slice and grill on bbq. Or, slice and have in salad.

There are two types of fennel, SqTom, the tall "common" stuff that comes in feathery green or bronze both of which can be used as a flavouring herb (or as part of flower arrangements etc) and the short stumpy Italian fennel ("Florence Fennel") that can be used as a vegetable. I don't exactly grow the tall stuff rather it grows itself in the same patch every year (I leave it alone as the organic books say it attracts helpful insects which deal with aphids etc...), but for some reason my occasional attempts to grow the veg variety haven't been very successful so I've never had a glut problem! My fussy eater daughter loves sister in law's 'Fennel Pasta' recipe. Think it's fennel bulb chopped into a cream sauce over pasta. I will see if I can find out the exact recipe and post it later.

I did a stir-fry of fennel and something else a few weeks back, having bought a bulb as an experiment, unfortunately I can't remember the detail, other than microwaving the (sliced) fennel a bit because I thought it would be slow to stir-fry, and perhaps a bit strong flavoured if under-cooked. I do recall that it worked! (I think the other veg involved was mange-tout)
