  • What can you do with gone over sweetcorn?

    I have some cobs that have gone over and will be horrible to eat, I read somewhere that they had turned into maize, can I grind it or something to make flour?
    Maybe if I leave them until they have gone really hard?

    I have already cut the cobs off the plants.

    You could feed them to chickens! To grind into maize flour they do need to dry hard. It'll be hard work grinding it I think.

      Dude!! is that you!?, wow man!, whoa!!, dont feed the chickens, take some belly pork, slice or dice, up to you!, fry off til coloured, set aside, sweat plenty of chopped onion in the fat, add garlic to taste+bay+thyme+diced carrot+chopped celery, stock to well cover, add sectioned corn, bring to simmer, braise in oven @ 180C 2 hrs, check corn & seasoning, chilli is an option, also Sassafrass, Okra, mud bugs!!.         I will try to get the recipe my son's new grandma-in-law (Mexican) uses for a delicious soup! I know it included a lot of corn (riper than the 'sweetcorn' stage, but not fully ripened), cut off the cobs and boiled with veg, meat and spices, but the recipe might be hard to come by.
        Flowers come in too many colours to see the world in black-and-white.

          I suppose "over" sweetcorn could be treated a bit like beans. You could take the kernels off the cobs and use as part of a recipe, but would need longer cooking time than sweetcorn to tenderise it.

              Thanks everyone, the chickens had a few in the end, I put some in a soup, tasted ok I suppose, still hard a bit and a bit of a faff cutting the kernels off the cobs.

                  Tried that last year with a cob I was given which was pure black, turned out this year as poor tasting black/yellow/white cobs.
                  AIUI you need around 150 plants to make sure you have a viable genetic difference, I thought I may be able to get away with it for one year, but apparently not.

                    thats what mine are this year,self saved seeds,the only difference i notice is,they not as big as last year,but that could be down to the weather,to get the seed,i let some cobs with the bigger bits on to dry out a bit on the window cill,they were still yellow,but darker,then just snaped them of with me fingers,i tried 1 of this years last week,needs a bit more growth,

                      I think it's important as well that you don't get cross pollination with other sweetcorn.
