  • Suggestions for my tea tonight please, using ...

    Hi everyone,

    I fancy trying something new for tea tonight, preferably using my home grown courgettes, peas and chillis. I have a couple of corn cobs too, tho' I confess they're shop bought and I don't mind if I don't use them.

    Perhaps something casseroley, tasty, ....? I'm not veggie, so can add meat. An obvious one is pasta, but I wondered whether anyone could come up with a better idea in the next 45 mins (before I head home from work).

    Oh, and can you make it low-fat?

            Some great ideas, thanks! This time, I stuck to an old favourite - pasta. I sauteed my veg (exc peas) with an onion in olive oil, and latterly some cherry tomatoes. this was stirred through pasta and cooked peas with low fat cream cheese.

            Lovely, but I have veg left over and I'm definitely going to try some of these.

              bit late, but this is good.

              Toast some bread, scrub a garlic clove over it, fry some tomatoes, thinly sliced courgette, chilli optional, maybe a bit of thyme or parsley, slice up some good cheese thinly [any would do, I've been using taleggio], put on toast, pour over tomatoes and courgettes.
