  • Fish Cake recipe anyone?

    I am most definately a fish person but am trying to encourage the kids to eat more of it and I think home made fish cakes might go down well. But not really liking fish means I have almost no expereince of cooking it either...does anyone have any nice recipes for fish cakes that the kids (and maybe even me!) will like please?

    FISH CAKES

    INGREDIENTS:
    8oz flaked cooked fish (my favourites are either crabmeat or a mixture of salmon and prawns)
    4oz dry mashed potato
    half an oz butter
    half an oz flour
    4 fl oz milk
    1 tbsp fresh chopped coriander
    1 stalk lemon grass, finely chopped if making Thai cakes
    1 green chilli, deseeded and chopped if wanted
    1 tbsp fresh root ginger, peeled and grated if wanted
    salt and freshly milled black pepper
    4oz breadcrumbs
    1 egg, beaten
    4 tbsp sunflower oil, for frying

    METHOD:
    1. Melt the butter in a pan and add the flour. Cook for 1-2 minutes, stirring continuously. Remove from heat and gradually stir in the milk.
    2. Return to the heat and cook for 2-3 minutes until mixture thickens.
    3. Remove the pan from the heat and add the fish, potato, coriander, lemon grass, chilli, ginger, salt, pepper and 1oz breadcrumbs. Mix together and leave to cool.
    4. Using floured hands, shape the fish mixture into 8 cakes.
    5. Dip the fishcakes in the beaten egg and coat in the remaining breadcrumbs. Cover and chill for 20 minutes.
    6. Heat the oil in a frying pan. Lightly cook the cakes for 3-5 minutes on each side or until golden brown.
    7. Enjoy

    I usually make up a double batch and freeze the ones I don't want after cooking. You can pop them under the grill for a couple of minutes on each side to warm up.

      Simple Salmon Fish Cakes

      I use tinned red or pink salmon with a squeeze of lemon mixed with mash, some finely chopped chives and red chilli. They're really easy and quick to knock up and serve with a salad and sweet chilli dipping sauce.

      Drain the salmon add it to a bowl along with the other ingredients and gently combine them. I don't mix it up too much as I like chunks of fish in my fish cakes. When you've shaped the cakes, dust them with plain flour all over and put them on a floured plate in the fridge for at least 45 minutes or freeze for later use. (If you don't chill the cakes they'll just fall apart during cooking, and you can cook them from frozen).

      Bake on a greased tray at about 180 for 15-20 minutes or if you don't care about calorie intake fry them in a shallow pan until browned, turning once only.

        Sheffield fishcake

        For what we Sheffielders call a fishcake as opposed to the rissoles we have foisted on us elsewhere you require the following;

        One large potato, cut into 1/4 inch slices
        cod or haddock fillets around the same thickness as the potato
        flour and water batter

        Cut the fish to fit the potato slices and sandwich between. Holding the slices by finger and thumb dip them in the batter until fully coated and then carefully lower into hot oil. When fully cooked when they float to the surface.

          We call them fritters in Barnsley, a fish cake here is mashed potato, flaked cod, salt, pepper and fresh parsley, all mixed together, rolled into a ball then squashed down a bit to make a round shape, roll in bread crumbs and deep fry..yum.

            Thanks for these folks, so is the general rule twice as much potato as fish then?

            and am i rightin thinking that you can add pretty much anything for flavouring?

            and do i mash the potatoes with milk?

            sorry to be a bit thick-o!

              Your not being thick, if you don't ask you don't get to know, I wouldn't mash my tatty with milk, it might make it a bit soggy, but I do put a small knob of butter in though, makes it taste creamy, with regard to your flavouring, that's up to your individual taste. But I'm sure what ever you do with them, you'll enjoy them because you've made them yourself. xx

                And a fishcake here is two large slices of potato with fish sandwiched in the middle, the whole thing dipped in batter and deep fried. Haven't had one for years....feeling a childhood moment coming on.
                Into each life some rain must fall........but this is getting ridiculous.

                  hey bluemoon, that sounds pretty yum i have to say...though the deep fried bit doesnt quite fit with my 'healthy eating' stint! might keep it up my sleeve for when I've lost a few pounds though!!

                  Have fish in oven with paprika as we speak - glad about the mashed pots - never thought it would make them too runny.....i'm quite looking forward to tonight's tea...

                  home made fish cakes (home grown tatties and home made bread for the breadcrumbs)
                  potato wedges (home grown of course!)
                  home grown runners
                  home grown whatever comes back from the garden when i eventaully get down there!

                      GN, i forgot to mention the best bit...my BIL appeared with 5 million apples and pears from their trees yesterday so we are having pear and chocolate crumble for pudding........ (who said healthy eating?????)

                          they were yum. not anything like the skinny wee things you buy from the supermarket! dont think I@ll be buying shop bought ones again somehow! thanks everyone
