Having steered clear of courgettes a week or two ago, I now have a glut of marrows. I've discovered I can eat them provided the flesh has been salted and rinsed before cooking. So, now, what to do with them. Would love to know your favourite recipes for these beasts!

Favourite Marrow Recipes?

1.peel outer skin
2. chop off ends
3. cut length ways in half
4. remove all seeds and discard
5. dice marrow into 1 inch cube
6. salt to taste
7. place in bowl and refridgerate for 18/24 hours
8. remove from fridge
9. kettle on and brew tea
10. and milk & sugar to personal requirement
11. make a cheese toastie
12. throw marrow in bin
13. enjoy said toastie with your cup of tea

Peel, slice into rings and remove seeds. Par boil if you can be bothered.
Fill with spicy cooked mince concoction (which usually consists of mince, onions, chilli, tom puree, chopped peppers, garlic, and cooked rice in this house but whatever flaots your boat really).
Top with cheese and bung in oven until marrow is soft when put knife in.
Yum.

Okay, Marrow and Plum jam from 'Let's Preserve it' by Beryl Wood:
2lbs prepared marrow
2lbs plums
4lbs sugar
Peel, seed and dice marrow; put in bowl with 2lbs sugar and stand overnight; put in pan, simmer till nearly tender; add stoned plums (crack some stones for kernels) and cook till soft; add remaining sugar and kernels, stir till sugar dissolves, bring to boil, and boil slowly to set.
I didn't add quite the full amount of sugar as I prefer jam to taste of the fruit. I also didn't bother with the kernels.
there are a few other marrow recipes - marrow curd, marrow chutney, marrow and apricot jam, marrow and blackberry chutney, marrow and blackberry jam, marrow and damson jam, marrow and ginger jam, marrow lemon curd, marrow and lemon jam, marrow orange curd, marrow and orange jam, marrow and pineapple jam. Take it that you don't do well with courgettes / marrows then Shirl? Have half a marrow in the fridge at the moment which I'm wondering what to do with - the first half was used in glutney but as it seems to be a bizarre seed free specimen it seems to be lasting forever. Am thinking of using some in a curry tomorrow night or cutting into cubes and cooking with some chilli, tomatoes and garlic as a side dish.

one courgette so far this year (from 7 plants), the pumpkins are just starting to form fruit (and they decided to grow where they are so nothing to do with my growing technique) and one marrow! The only courgette plant that has survived is now producing 6 fruits (round yellow ones) so there is a chance we might all taste them if the weather stays nice for another couple weeksHappy Gardening,

Marrow Cream
2lb Marrow, peeled deseeded, chopped, steamed till soft
1 3/4 lb sugar
4 oz butter
2 lemons
puree marrow & boil with sugar, butter, zest & juice of lemons for half an hour
Tastes delicious & EXACTLY like lemon curd.
