  • How do I roast beetroot?

I have three baby beetroot and i fancied roasting and serving them up with tea tonight. I've searched for recipes, and one seemed to indicate the beetroot should be cooked before being roasted () and the other recipe didn't specify.

As they are so small (not much more than golf ball) I'm thinking maybe cut them in half, drizzle something on them and maybe half an hour in the oven. Is that wrong?

    All help gratefully received!

    Thanks

Exactly that ... but I sprinkle lots of paprika and cayenne on them too

You could also try baking, wrapped in foil- keeps all the flavour in and doesn;t go as leathery

I'll try the foil next time.

          They were, however, delicious.

          Thanks

If I'm peeling them to roast and eat hot then I pretty much do it as you've suggested. If I want them cold for a salad or pickling then I simply scrub, wrap in oiled foil and roast whole. Let them cool and then the skins rub off really easily.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?
