damsons/pork shanks

can anyone help................

I've lots of damsons,apples and 2 lovely pork shanks - can anyone suggest a good way of combining these ingredients

Sorry for the delay - himself was in the bath when I read this!

He said, bone the meat, stuff it with with the fruit (de-stone the Damsons), tie up and seal, then season and put in a casserole dish and cook slowly in the oven at a low heat.

Meanwhile, reduce the remaining fruit and some red wine to make a Jus and serve as a sauce over the meat!

Serve with roasties and green veg - He used to be a Chef, and seems to know what he's doing LOL!

When you doin it? - I'm invitin myself for dinner!
