    Its time for the annual 'what's your favourite carrot cake' recipe request!

    So what's your fav carrot cake recipe? Got lots of oddly shaped carrots to use up.
    To see a world in a grain of sand
    And a heaven in a wild flower

    This is my fave Carrot cake recipe I've been using it for nearly 30 years. It's based on a 1970's 'Family Circle' recipe.

    Carrot and sultana brack

    8oz raisins or sultanas
    8oz grated carrot
    5tbsp hot tea
    8oz light brown sugar
    8oz SR flour
    2 eggs
    ½tsp ground cinnamon

    Place fruit in bowl pour over tea leave to stand at least 1 hour but overnight is best.
    Stir in sugar, flour, spice and eggs.
    Mix well
    Spoon into 2 greased 1lb loaf tins
    Level top and cook for 1 hour at 350f, 180c or gas 4 for 40 to 45 mins.
    Test with a skewer
    Turn out and cool.
    Location....East Midlands.

        Low-fat Moist Carrot Cake - English - Recipes - from Delia Online

        This is the one I use. Although I've never included the orange zest and I don't think I've ever included the sultanas either. And usually use nutmeg or cinnamon instead of allspice as I don't have any.
        I never bother with the syrup or the icing either, it is pretty moist as it is.
        I sprinkle chopped squash seeds on the top before cooking if I have any around for a bit of crunch.

          Have you tried it with half sultanas half nuts? Or with wholemeal flour?

          It sounds very tasty and even more low fat than Keiths.

            On the original recipe there's a few variations, I've tried them both over the years but my fave is still the carrot cake.

            8oz raisins
            8oz sultanas
            1/4pt hot tea
            8oz brown sugar
            8oz SR flour
            2tsp ground mixed spice
            2 eggs

            mix and cook as above.

            or replace the raisins with a whole orange and 4oz of chopped walnuts soak in 5tbsp hot tea.
            Location....East Midlands.
