  • Nigel Slater's Squash recipe

    Was delicious!

    Slice a butternut or any squash down the middle.
    Scoop out seeds.
    Put dab of butter on and score flesh.
    Roast for about an hour at about 200
    Meanwhile prepare stuffing:
    Sweat 2 large onions sliced, for about 15 mins in some butter
    Then add a good handful of sultanas, a good pinch of cinammon, a good pinch of cumin seeds (I used ground as all I had) and a good pinch of paprika. And salt and pepper to taste.
    Add some inch long strips of fresh ginger.
    Simmer it for about 10 mins until onions start to caramelise.
    Add stuffing to the scooped out hollows of butternuts. Roast again for about 10 mins.
    Serve straightaway.

    Hi Janeyo thanks for posting this - I half caught it on when watching the proggie but was too distracted by the Vine at the time to write the recipe down! It's not a high fat recipe which is good for us rotund grapes!
    Whooops - now what are the dogs getting up to?
