  • What to do with all my eggs.......

    well, hopefully when my girls start laying!
    I wondered what everyones favourite ways were using eggs, I know your ideas will come in useful soon.

    we give lots to family and friends and sell a dozen or so a week as well.

    i also make the following when i have a few too many:

    coconut cake (6 eggs)
    quiche (2 eggs per quiche - make a few and stick em in the freezer)
    muffins (2 eggs per batch and open freeze some of them)
    pancakes (nearly every sunday morning just now!)

      creme brules( spelling ???) Mayo, omlettes, weekend brekkies, firends, you'll be surpised at the amount of eggs you can go through!!!

          Anglesy Eggs,

          One or two eggs per person
          For or five large spuds
          Two fair sized leeks
          Cheese sauce

          Boil eggs for three minutes, cool in cold water. Meanwhile prepare and cook potatoes and leeks. Mash well together and beat with a wooden spoon until creamy.
          Peel eggs, halve and place in a baking dish, cover with potato mixture.
          Keep warm while you make the cheese sauce (put a bit of mustard in it if you have it)
          Pour cheese sauce over eggs and spud mix and put in a fairly hot oven until brown and bubbling. Lovely!!

            My wife & I often have scrambled egg on toast after we have done the chooks in the morning. Our record so far is using 15 eggs, that soon gets rid of them.

              I make lemon pud every night, 2 or 4 eggs depending on how greedy we feel. Lemon curd uses a bunch of eggs. Meringues, chips eggs and baked beans mmm. Potato and egg salad, egg boats. My pet cat is partial to raw eggs (usually the ones that get dropped as I open the door....)

                Hi
                When I've really got too many eggs I make 12 egg pound cake, that makes enough for three cakes which I freeze for the winter when the egg supply starts drying up.

                Nigella has a six egg almond cake recipe

                icecream have a recipe using 8 eggs. As the eggs for icecream need to be separated, any that get broken go in the freezer with a little salt or sugar added against that eggless winter period.

                Quiche usually uses up 3

                Potato and egg salad - uses 4 eggs

                Scotch eggs - uses however many you want to use up, usually make 6 at a time.

                Egg mayonnaise for sandwiches - uses 4 eggs

                Would love to make lemon curd but I know it would mean eating it with loads of bread so have resisted this particular avenue.

                Egg custards and creme caramel 4+ eggs, although like lemon curd stopped making this as I ate too many.

                And boiled eggs and soldiers for a lovely supper.

                Yes I know icecream and cake are fattening too but at least they are safely out of my way in the freezer and not screaming out from the fridge!

                    Devilled eggs.
                    Hard boil your eggs, leave to cool.
                    Peel and cut in half lengthways.
                    Remove yolk. Mix yolk with mayo and mustard or mustard powder and stir till creamy.
                    Refill eggs with the mixture and sprinkle some paprika over the top.
                    Delicious

                      Omelettes
                      3 egg quiches
                      Proper Rarebit (cheese mixed with an egg and a little mustard & pepper spread on toast and grilled)

                        Pickled!

                        I've done them as presents with turmeric before, the outside of the albumen goes yellow so they look really interesting when sliced open on salads.
                        You can also pickle them in old beetroot pickling vinegar so they go purple, although I've never done it.
