  • Curd tart.

    Are there any super cooks out there who have a fool proof tried & tested recipe for Curd Tart. I've search the Vine but no luck. Many Thanks in advance.

    Yorkshire Curd Tart
    6oz shortcrust pastry
    8oz curd
    1oz butter/marge
    1oz washed currants
    1 large beaten egg.
    1tab caster sugar
    1tab golden syrup
    1tab rum(optional)Roll out pastry and line 7"flan tin.Place on greased baking sheet.Combine all other ingredients and fill pastry case.Bake above middle shelf.gas 6.
    400F 200C for 30 mins.
    Haven't triedc this one but its from a Yorkshire Farmhouse Cookery book so should be good. Are you attempting to make your own curds?

      You need proper curd - not easy to come by but you can get it sometimes at farmers' markets.
      Make a pastry lining for your dish. To half a pound of curd add 3 oz sugar, a handful of currants and 2 beaten eggs.

      Pour in pastry case, cook in a medium oven (till done) then cool and eat.

      I've tried it with cottage cheese, which looks similar but it hasn't the flavour.
      Whoever plants a garden believes in the future.

          It's often called Yorkshire Curd Tart - the curds are like a soft cheese - similar to cottage cheese to look at.
          Whoever plants a garden believes in the future.

                    i make mine with cream cheese (like philadelphia) and they work OK.
                    The problem i have here is finding the currants!!

                      You can make your'e own curd using something like Channel Island milk,the homogenised and semi skinned etc don.t work.

                        Thanks guys, that gives me something to think about. It's strange but I adore curd tarts, then I found out they had cheese in & for some reason put me off .........I still love them though.

                              I've just returned from the in-laws where I found and old recipe book called Grannies Cook book and inside was this:-

                              How to make curd for tarts.

                              Warm a quart of milk in a pan to blood heat and put a tbsp of vinegar in it to break it and make the curd.
                              When cold strain through a sieve.
                              Add 1 egg, 2oz sugar, 2oz sultanas, 2oz raisins and mix together.
                              Use for tart fillings.
