    Hi has anyone got any good ideas of what to do with parsley? I have quite a lot in the garden still and would like to use it before the frost gets it.

    Freeze some of your sprigs - then you just touch the frozen leaves and they chop themselves by shattering! Not sure of any recipes apart from parsley pesto.
    Whooops - now what are the dogs getting up to?

      I made a mean parsley sauce last Saturday for pan fried salmon Philadelphia mixed with some soured cream and a large handful of chopped parsley gently heated.

      I've got loads of the stuff, does anyone know if you can freeze it? I would have thought so, I might try it....

      Daft question though.... Is it annual????? or do I need to reseed??????

          Freeze it up, then you will have it all over the winter. Maybe Dry it?

            When I've got a lot of parsley I wash it, pick the leaves off the stalks into the salad spinner. Spin the parsley until quite dry. Put into the food processor and chop until finely chopped. Lightly pack into freezer tubs, and freeze. Et voila loads of ready chopped parsley for sauces, soups and stews. All you need to do is lightly scrape with a fork the amount you need, into a bowl.

            I also keep and freeze the stems for use in stock.

              I freeze mine same way Jeanied does, and it keeps us going until the next lots grown.
