  • Orange Curd

After seeing the thread on Lemon Curd, I decided to try and make some orange curd seeing as I had a big bag of oranges and wanted to use them up. I found a brilliant recipe and have just finished making it and it's just so yummy! So just had to share this one.

    3 oranges
    1 lemon
    450g caster sugar
    6 eggs - beaten
    112g butter

Wash the oranges and lemons and remove very thin strips of rind from one orange and the lemon.
Cut the fruit in half and squeeze out the juice, removing any pips.
Put the juice and rind and the beaten eggs and all the other ingredients into a bowl and place the bowl over a pan of water on low heat and heat gently until the sugar dissolves. Continue stirring until the mixture thickens - took me about 3/4 of an hour in all. Then remove the rind and place into hot clean jars and seal at once. Makes about 900g.

I did find that obviously it wasn't very orangey in colour, but the flavour is there. Will try the lemon curd one next!

      Hope you use organic oranges.
Non organic orange peel can contain quite high levels of pesticides and fungicides, some used in growing and some used post harvest to prolong shelf life.
Some are apparently sprayed or dipped in orange dyes to make them look more appealing -nice!

To be honest I didn't know the difference so had to do a search and after reading many views on the subject....all confusing, I eventually found this:

According to the Trading Standards Office, Schedule 1 of Jam and Similar Products (England) Regulations 2004, there is legally no compositional differences between lemon curd and lemon cheese. There is no difference. They are one and the same!
